ROSÈ BRUT SPARKLING WINE - ORGANIC
TRADITIONAL METHOD
- GRAPES: Blend of indigenous red grapes including Aglianico, Negroamaro, Nero di Troia and Primitivo
- PRODUCTION AREA: Vineyard ‘Montevella’, in Acquaviva delle Fonti, Puglia
- SOIL: Deep silty clay loam
- VINE-TRAINING SYSTEM:Spur-pruned cordon
- PLANTS PER HECTARE: 4300
- PRODUCTION PER HECTARE: 6 tonnes
- HARVEST:Hand harvest in boxes, during the last week of August / first week of September
- VINIFICATION: Soft pressing of the grapes, first alcoholic fermentation in stainless steel tanks at a controlled temperature
- SECOND FERMENTATION: In the bottle, left to refine in contact with the yeast for 24-36-48 months
- ALCOHOL CONTENT: 11% vol.
TASTING NOTES
- SIGHT: Bright coral pink colour revived by copious perlage
- NOSE: Intense effusion of rose petals, raspberry and cherry, combined with flavours of pink grapefruit, set on a background of pastry
- PALATE: Full, round sip with fine bubbles and a saline finish, enriched by citrus echoes
- FOOD PAIRING: For during the whole meal, but favouring cold cuts and semi mature cheeses, aubergine parmigiana, fish, legumes, tomato pasta, and white meats
